Udon noodles with dried tofu in sesame sauce
Ingredients

udon noodles, 8oz package
-
100g Mulan dried tofu, slice 3 pieces
-
2 medium sized carrots, shredded.
-
2 scallions, shredded.
-
red pepper flake
-
1/2 tsp white sesame seed
Sauce
-
2 tsp soy sauce
-
2 tsp balsamic vinegar
-
juice of half a lime
-
1 tsp garlic
-
1/2 tsp salt
-
1/2 tsp sugar
-
white pepper
-
1 tsp sesame oil
-
4 tsp Japanese sesame paste
Follow Along
Directions

Boil udon noodles 2 minutes. Retain some of the cooking water and drain the rest. Set noodles aside to cool.

Simmer dried tofu, bean sprouts and carrots in udon noodle cooking water. Drain and set aside to cool.

Mix all sauce ingredients in a large bowl then add udon, bean sprouts, and carrots. Stir well.

Plate and garnish with shredded green onion and red pepper flakes. Sprinkle white sesame seeds on top.
