Directions

Add all of the batter ingredients into a large bowl and mix well. Gradually add water, stirring until batter is smooth.

Peel the bananas, cut in half and place on a plate. Sprinkle bananas with lime zest, front and back.

In a large frying pan heat peanut oil to 180 degrees. Oil should be at least 5cm deep.

Dip bananas in the batter to evenly coat, then carefully fry in the hot oil for about 2 minutes, until golden and crispy.

Carefully remove the bananas with a slotted spoon. Drain on paper to absorb excess oil then place on a drying rack to slightly cool.

Sprinkle with cinnamon and powdered sugar before serving.
